Its too late now, but for next time: this is a perfect example of why it pays to ALWAYS make tests of the finish to be used on samples of the same wood, prepared the same way.
You should make a test now. First replicate the Minwax on some scrap oak treating it as you did the bed. After it has cured for a few days you can first see what happens with just giving it a sanding with 220 or 180 grit and applying the General finishes stain. If that looks like you want, then do the same on the bed. You may find that you don't get enough stain off that way and the General finishes stain doesn't penetrate enough for your taste. If so, try stripping with a methyl chloride stripper--testing on a minwax oak sample, and then checking to see how the oak looks under the other stain.
Remember, when testing you also need to test with a coat of the top coat before making any final judgement.
