I understood that, some yrs ago, Guinness stopped recording the 'smallest boat' , 'youngest sailor" for this very reason

I think the proximity of the head to the galley would be problematic for me.

given that space is limited, you can look at the world record for longest flight when two men flew for 60 days continuously in a tiny Cessna airplane

I see on the web that another attempt is being made by a different guy. Guinness has the better wisdom. I thought Robert Manry was silly enough.
