Epoxy for wood to metal attachment?

I purchased a kit to make a rocking pizza cutter for a gift. The kit contained the blade and four 1/2" rivet type of connectors but I would like to use epoxy to bed the blade in a groove wood handle. Is there a special epoxy for this type of application or will any epoxy work? This would not be a utensil that would be placed in a dishwasher. I've used epoxies for some things but never for bonding metal to wood so looking for some expertise here. I will still use the rivet connectors but may find something along the lines of those used for knife scales a the furnished ones are very short and have limited thread length.

If it's going to have wood scales, I would instruct the customer NOT to place it in the dishwasher. Most of the time, people are told to wash wooden items (treen) with warm, soapy water by hand.
If you're still using the rivets (mechanical connection) then the epoxy will be fine.
I typically use System Three Quick cure 5 and it holds just fine.
