I found a live edge rainbow poplar slab at the cabinet shop to make a coffee table with, but I do NOT want to use epoxy... what would y'all recommend for a hard finish?

Your favorite varnish should work well.

My favorite these days is Arm R Seal Satin. 2-3 coats with a quck leveling sanding with 320 between each coat, buff last coat with 0000 steel wool, or eqivalent. Nice and smooth. Can rag or brush it on. Never tried to spray it, but it can probably be done.
