But if doing a new install instead of a retrofit, should I go with cans or ceiling boxes?

They should make a "deep ceiling box". It would be simpler than a can but capable of holding small gimbal LEDs - and many other types of light fixtures.

The answer is, it depends. That's going to totally be dictated by the lighting design.
