I've got a set of 8 Gerber Miming steak knives that my folks gave me decades ago. I don't eat enough steak these days to justify sharpening more than once a year.

They're no longer in production, and I'm seeing stupidly high prices for them on Ebay.

I’m sure they’re great knives and I love the Damascus Steel look.
The price vs. value is way outside my comfort zone.

Yah, it's a hard pill to swallow. I've been acquiring Shun knives for a few years now, after using one at a friend's house. We cook a lot though. My g-friend of 15 years is Cordon Bleu trained. Ironically, she likes the relatively inexpensive knife set I bought her 10 years ago, and will rarely grab one of mine. They are Victorinox (Fibrox), and are a great knife, and a very good value. https://www.victorinox.com/us/en/Pro...&maxResults=30

Cutco is my vote as well. Great knife made in the USA. Orleans New York I believe.

They're rated 5 star, FWIW. I'll order another set if I like them.

Final update. We received these a few days ago: https://www.amazon.com/Knives-Kitche...ustomerReviews
I’m very happy with the size & heft. Used them tonight on a beautiful ¾” ribeye. It cut like through the steak like butter. Ordered another set.
