I have a Sharp UX-510 fax machine that I would like to get rid of.
Any suggestions how to do it?

If it's still in working order, you might try Freecycle: https://www.freecycle.org/ . A friend of mine uses it often - it seems there's always somebody out there who has a use for what you don't.
If it doesn't work, or you don't want to mess with Freecycle, Best Buy will recycle computer/electronics devices at their stores. Most stuff they will take for free, but there's a small charge for some things (e.g., TVs and monitors).
Many local jurisdictions offer "eRecyle" days where you can drop off various kinds of electronics including computers, printers, monitors, fax machines, etc.

those e-recycle events are often scheduled on or around Earth Day which is coming up soon.
Our local waste handling service is usually pretty good about being able to direct people to where many items can be taken for disposal.
It is a good idea to call to whom ever they refer you. They referred us to one of the local hardware stores for recycling fluorescent lamps. Turns out there is a daily limit of ten per household unless previous arrangements are made.

Take it out to an open field and go Office Space on it!!
Haha... Bryan beat me to it, but here's a link for those that don't get it:

Office supply stores like Staples often take computer product recycling...you can ask them if a fax machine also qualifies.

Freecycle.org as Gary said.
Yahoo groups also have a Freecycle page.

Never, under any circumstances, consume a laxative and sleeping pill, on the same night
