All good suggestions above. I've had good success using MDF but in my application, I flooded the surface with polyurethane... Feeding it as much as it would absorb. I used about 5-6 applications. That yielded a hard, smooth, waterproof surface that I have been very pleased with. That was 15 years ago and other than some utility knife scars, the surface isn't near ready for replacement. Credit for the idea goes to a gunsmith friend of mine.
Full disclosure...I do have a great workbench made of white ash. What I describe above is what I made all of my utility surfaces from...

My hand tool bench has a top of white oak, and it is great. My assembly table is made from 3/4" ply, and it dents easily.
