Back bent gouges

Can someone clarify the use of a back bent gouge? If it's used for paring a convex surface, why is it it still outside-bevel? Once you turn it upside down so that the profile fits the scallop, the bevel is facing upwards and I would think it would dig in just as if you turned a regular gouge upside down. Wouldn't you want, essentially, an incannel spoon gouge turned upside down?

Adam, the only place that I have used a back bent gouge is for the area between knuckles on a Philadelphia style claw and ball foot.

I am sure there are other uses, but for creating the inner surface of a bent hot dog shape, there is little better.
