I want to coat 12" diameter slabs of pine with bartop resin. How do I prevent it from going over the edge without removing the bark?

Either tape around the edges and keep a close eye on it, or pour thin enough coats to avoid spillover.
I poured Incredible Solutions Table Top Epoxy on a test piece of wood. I thought it would flow over the sides but it just sat there. It was probably 1/16" or more in thickness. All along the edges it formed a round over that reminded me of surface tension you see with water.
