Does wood breathe less is highly sanded

Beginner woodworker here, sorry if this is a strange question, just randomnly thinking, let's say I have a piece of freshly planed Maple.

Iif I sand it with the grits 80,120,240 (or similar) would it `breathe` (moisture in/out) less and/or be any less succeptible to warp than if I just used the 80 grit paper?

No. Water molecules are very small relative to any surface perturbation you might create. While some treatment may create more surface area that's probably only going to affect the top mm, migration through the rest of the wood, which will be rate limiting as to ultimate moisture content, will be unaffected. I'm not actually sure whether the effective surface area of a board will be higher with 80 or 240.
