Finish for butcher block - for shop use

I have some 1 1/2" thick butcher block counter tops I want to use for shop use. I've read varying things about finishing, from oil to wax to shellac to poly. Again, these will be used in a woodworking shop, exposed to everything from grease to saws to heavy things dropped to drilling.

    What do you all recommend?

    Thanks,
    Matt

A mixture of BLO (boiled linseed oil) mineral spirits, and varnish in equal amounts would be my recommendation for a workbench. Durable and easily repaired.

Would Waterlox be an acceptable off the shelf product? Wipe on a few coats?

Naked or shellac. I prefer shellac as it is so easy to repair and a great place to use up any leftovers. Easy to pop off glue drips. I have a bench that came from a pattern makers shop and it had shellace on it. If it was good enough for them, it is certainly good enough for me.

Some prefer no finish to maintain a bit of roughness on their tops. It depends on how you work and what you plan to do on the bench.
