i got a rabbit 80 watt a few weeks ago and have what could be a big repeat customer asking about lasering AA. i am wondering what kind fo proces i must go through to get good quality and mainly i would like to be able to do some sort of "gray", black and white if posible.

Shades of color are done via dots (halftoning), like newspaper print. A little searching on such a keyword will get you started... you'll end up with a 1-bit image being sent to the laser.
