I use a jorgenson clamp with a v groove cut in the clamp. works like a dream. i think lathe would be to slow for me.

Myrtlewood is good for both. I have made salad bowls for friends. I personally think any wood would make good bowl. It is the finish that i would worry about.
I would DNA it to dry. I have done this with myrtle and it works fine. i turn a lot of wet myrtle and it moves so for your project get it dry.

I broke the gouges because i hit a very hard knot. I only had an 1 1/2 inches away because of the out of roundness of the stock. My new gouge doesnt even budge when i hit a hard knot.
The bar clamps are 3 pieces of tsl glued together. TSL is enineered lumber for truss chords. It is very hard. You cannot drive a 16penny nail through it. I was to lazy to move it anywhere else....
