the length of the piece @ 15' is the limiting factor. most paper backed veneers are at 8' might find some at 10'

I have used prefinished maple ply for cases, it's lighter in weight and more water resistant than melamine on particle board

i'm sure i'll get flamed for this,,, but jointer tables don't have to be"co-planar" just set the knives off the out feed table, and start your wood a few inches and then keep pressure on the out feed...
your idea of a routed line will work, but i think i would make 4 fronts and glue/join them edge to edge.
planer/moulder is a great machine. have one for 20 years, accepts knives for making all kinds of profiles.
tape sounds right. or you could cut one end with the heel against the fence and one end with the toe on the fence ,just make sure you have one of each at the joint.

think of oven dried wood as sort of case hardened. you're releasing tension in the wood as you plane. if i'm making doors, i let the pieces move a few hours before final sizing.
