Mike, could you cut the outer edges of the doors the same profile as the sides ? If this leaves too much of a gap between the closed doors, could you put a beaded spacer on one of the doors ?

Andrew, I like the gentle curves of the oak table. The fillets in the inside corners are especially attractive. I know from experience they're not easy to execute.
It shouldn't be a problem to resaw 3" wide boards. Gluing up so many boards won't be difficult. I would glue a few at a time. That would be time-consuming, but fairly easy. How will you surface...

It's hard to advise without more specifics but I would tend to lean toward a core box bit.
