  1. I'm assuming that's a restaurant in Montreal? I was referring to a Garde Manger kitchen (it means cold kitchen in French) it is generally a kitchen where all of the cold items are made. Cut fruit, fruit carvings, vegetable carvings, ice sculpture, tallow sculpture, salad dressings made for other kitchens, dips, garnishes, salads for buffets etc. Generally things that are served cold or the decorative "artsy fartsy" things.
