Wood Scent

I've been thinking about this and a couple posts have alluded to the wonderful smell of some woods when they are being cut.

Is there a finish that might allow the wood's scent to remain? I specifically ask because I bought some of the Bethlehem Olive wood pen blanks, and was wondering if the sent could be maintained and still protect it somewhat from the rigors of pen use.

I'm also building up an inventory of santos mahogany that also has a wonderful scent.
