Will mineral oil pull up wood? - newbie

Put several coats of mineral oil on a few cutting boards that I had sanded down very very smooth and after soaking in the mineral oil, the top is pretty rough feeling again.

Sand again and it'll be fine or?

On the cutting boards I've made, I don't worry too much about how smooth the surface feels. Considering you'll be chopping and cutting on it, and not running your hands over it. Just my opinion.

Sometimes when this happens I pour a little more oil on and use 220 wet / dry paper to lightly sand down those rough areas.
