I got a buddy, every year goes up to Alaska.

When he's gone, I water his garden.

When he gets back, I get Halibut.

It goes on the grill.

Olive oil, Kosher salt, Course ground pepper corns, A squeese of lemon.

Nothin Better, Nothin!

Yum...one of my favorite fish...try this for something a little different...
Mustard-Glazed Halibut Steaks

4 halibut steaks 1 inch thick
2 tablespoons butter or margarine
2 tablespoons lemon juice
1 tablespoon Dijon-style mustard
2 teaspoons snipped fresh basil
pat dry with paper towels. In a small saucepan heat butter, lemon juice, mustard, and basil over low heat until melted. Brush both sides of fish with mustard mixture.

Grill fish on the greased rack of an uncovered grill directly over medium coals gently turning once halfway through grilling and brushing occasionally with mustard mixture.

I'm on the way too.. straight up 35 the whole way...LOL Like 7 or so short hours.
I love fresh fish, like really fresh. I grew up on Lake Champlain and my father and I fished land locked salmon for years & years... caught that day and prepared that evening.
Man, you just made me homesick......

I just stuffed myself on lasagna, the last homemade meal for me for the next two weeks, and now after this post am hungry again. Nothin like good halibut, walleye, or black crappie. Clabo's recipe is a good one.
