Just a few more for ya.

1. Papio - it was caught before work on the wharf we are repairing
2. Moray eel caught at the same place
3. Ahi for the topout party. We bought it at the auction house that morning.
4. Ahi
5. Getting the meat ready. We had enough that everyone took some home

WOW...talk about ORM...

Orange safety shirts with reflective stripes
Hard hats
Safety glasses
Long pants
Steel-toed boots
Personal flotation device

All that just to process some Ahi...now that's a safe operation :D:p:D:p

Be well,

Doc

Seriously though - that is an awesome cut of meat! What's moray taste like (and don't say chicken!)?

Well I did tell them they could park the hardhats and PFD's, it took awhile for them to do it.

I do not know what it tastes like, even though I am a Cajun, I do have my limits. David, who took it home, cuts it up and fries it.

The 4 drums are the smokers for the meat. Emilio, the fellow in the red bandanna is the smokemeister.

The Ahi was turned into sushimi and poke

Guy ("the Buoy"), blue bandanna, can turn out amazing poke and sushimi.

That is some mighty fine looking food Kevin. I had breakfast earlier but my mouth is watering over that Ahi. I'll have to get some of your secret recipes. Thanks for the pics! BTW, as the others have said, y'all are some safe chefs!
