I need to shorten a couple of bar stools, what is the best method to do this.

If it were me, I would place them on a flat surface, take a block of wood the height you wish to remove from the legs, place a plane blade on the block, and scribe a line around each leg, all the way around as most legs are on an angle, or are tapered, or..., then take your favorite hand held saw (dovetail, tenon, jigsaw, or...) and cut just below the line as close as you dare, then place some sandpaper under the legs on the flat surface and rub till smooth and even. Voila!
This is what I did to reduce the height of some kitchen chairs we bought. Felt fine in the showroom, but a tad high at home. Took off about a half inch.
