I've been using the Rockler Poly Gel for about 2 years now and here's my findings:
The Good:
You really can't make a mistake with this stuff:D
You just wipe it on and wipe it off
I get a decent build-up after 2 coats
The finish leaves a nice "hand feel"... very touchable and lets the wood show... not plastic looking
Very forgiving... I don't know what's in the stuff, but I've come back 1 hour after a wipe-down and found some sawdust on the finish. I just grapped a paper towel with a little of the gell and wiped/rubbed the finish to perfection!!!
The Not so Good:
On maple, birch... (lighter woods), the finish is a little too yellow for my taste
Only available in satin
No... I don't work for Rockler :D:D:D
