What glue to use for maple cutting boards?

Any water resistant glue is just fine. Titebond II or III, for example. Epoxy. "Food safe" is just a "marketing" word, not a real designation.

Urea resins and cross-linked PVAs are used by manufacturers. Hide glue might be not be safe from a human consumption standpoint depending on what is in it as far as retarders, etc. but since it will be constantly exposed to water I wouldn't use it anyway.
