I am making a peppermill out of black walnut for my dad's birthday, and I am not sure what to finish the interior with, that will keep the peppercorns fresh and not pickup aromas from the finish or the walnut. Any suggestions would be appreciated.

You really don't need to finish the inside but if you insist you can use Shellac.

Brian I have made a couple of sets out of walnut and I didn't use any finish. Neither party has said anything about the walnut smell or taste in the peppercorns. In fact we ate at one friends house that I gave a set to and I didn't notice anything.

I don't put any finish in any of my pepper or salt mills. I am not sure but I maybe would use Shellac if I used spalted wood but won't use it because I am not comfortable using it for eating utensils.

Brian I do not finish the inside of mine, but I use lacquer on the outside.
