Whats the best finish for a honey dipper? I was going to go with mineral oil and beeswax (sounded logical =) but I want to make sure there wasn't a better option. Opinions welcome!

Nothing, just honey if your going to use it.

I guess I didn't consider that. Won't the wood swell when washed or get encrusted with honey without a waterproof coating?

The old wooden spoons worked just fine with out any finish. A honey dipper will eventually become encrusted with honey weather it has a finish on it or not. The finish doesn't keep the crud off. Washing it off now and then does.
Make a bunch of them, they are easy. Like Chinese chop sticks, or anything from china, use once and throw away. :D

'Nother vote for beeswax. Very renewable, even by those who purchase the dipper or who receive it as a gift. Renewable and simple. No flavor changes either!
