About that apricot tree...

Since the first post yesterday, the birds have started on it, and the fruit is just turning from green to yellow. My bride asked me to ask you....can you freeze fresh apricots??

Yep, you just blanch them where you can peel the skin and slice them like peaches in a can, then freeze them. Some people dehydrate them and store them that way too, but not as good a flavor when rehydrated. I love fresh apricots and peaches.

We used to dry them too. We'd cut them in half and remove the pits, then lay on trays in the sun with cheescloth over them.
