I just built a hanging tool cabinet for my shop. The doors are made of 3/4 birch ply and will have a 2" inset so I can mount tools on the inside of both doors. Now I'm worried if I use piano hinges as I intended, the doors will bind against one another when I try to open them because of the depth ( about 2 3/4" ). Am in correct in my concern and/or is there a specific hinge that would allow the door to shift towrds the hinge as it's open to keep from binding????? The saga of a new woodworker.... ugh!!!

Yes, you may have an issue with real thick doors. The usual solution (done on many people-sized doors) is to bevel the non-hinge door edge back at a few degrees.
