After advice from several creekers on possible designs of an adjustable saw horse I came up with the following. As you can see the height can be adjusted through the two slats that slide through a slots, with a dowel stuck through the appropriate stop hole to adjust the height. The top support/cross dowel is enclosed by a 1" PVC pipe to provide a rotating low friction support surface.

Details of the sliding dovetail joints of the rails. These are snug fit and need a little bump with a mallet for a tight fit. This allows me to dismantle the saw horse for storage.

The sliding dovetail rails are surprisingly very sturdy. Lowered all the way down the saw horse fit perfectly against my table saw as an out/in feed support.
