I was just reminded of a question I have been meaing to ask but keep forgetting: What do you use to glue the segments and layers of wood together? I was thinking about gluing numerous thin layers together but wanted to get opinions on how to go about it. Are different glues used for different woods? Thanks.

Generally woodglue (elmers, titebond, etc) or Cyanacrolite glues are sometimes used if you're in a big hurry. I think CA glue may not work with some woods so well, but that's speculation. I use titebond with good results myself

Titebond Original is my first choice. Titebond Extend if I need more time. Gorilla Glue if I need even more time. CA and epoxies are only used (and rarely) to do minor repairs.
