I'd have to be very careful not to start looking at the wood while I was slicing. On the other hand, it would be nearly impossible to misplace.

That's really cool.:p I'm with you, I have used all types of wood with excellent long term results. I also tend to throw the mineral oil thing out the window too. I use many, many coats of wipe on poly and have never had pore problems with walnut, oak, jatoba or any other open grained wood. I do tend to leave them sit for a couple of months to insure a complete cure.
