I have used a few methods over the years to fill grain to get a smooth finish, but the method I tried yesterday is the easiest I have found.
I tested with a piece of oak.
1. Sand to 200 grit.
2. Apply Danish Oil and sand with 400 grit wet/dry sandpaper.
The 400 grit creates the right sized wood flour, which mixes with the oil and fills the voids in the wood with a perfect color match. The result is a non reflective, very smooth surface. That is as far as I have tested, but I imagine one could put a few coats of varnish on it to give it a nice deep luster.
