I am no where near ready to tackle this potential job, but what can I say, if the project list isn't getting bigger by the minute, I must not be needed anymore...

Anyway, has anyone seen plans or a How-To for building a built-in BBQ?

...there are many ideas out there, internet is full of em'. Lot's of BBQ hardware and you build around it. Many ways to achieve the effect of the old brick BBQ pits. But, if I were doin it, I'd do it in real brick. Not really hard to lay, just takes a little practice. I would lean toward a grill and a smoker combo. Learn that craft and you'll build one that will last a lifetime.

Sunset has a good book called "Building BBQs and Outdoor Kitchens". I used it in building mine. I bought a slide in grill, fridge, and door set and then built a base for it all. I actually built mine out of steel framing and hardie backer, and covered the top with tile and the sides with synthetic stucco. Let me know if you want more info. I really like the way it tuned out. It's very sturdy, and I could make exactly what I wanted.

I just finished painting mine last night. I would reccomend buying the Grill inserts and whatever else you plan to put in it and then design around that. I hope to have pictures as soon as I finish mine completely. It is an "L" shaped grill that houses the grill insert and a fridge. Tile top and a raised bar area for folks to sit up and have a beverage or two. It is all block construction with a layer or two of stucco (The or two part comes from me covering up my stucco learning curve). Been a fun project, but I'm ready to get back to wood.

Bet you never thought you would get this much info to look at. This is what I want to do. Bought the grill but haven't built it in yet.
