Can I do the following?

Can I apply a coat of Watco Danish Oil, let it dry for several days, then coat with Zinnser shellac, then topcoat with water based finish (Duracoat, Target, etc.) ?
I know a lot of people just use the shellac for color and warmth, but I still like the pop of the oil.

Yup...more or less what I do. But rather than use the more expensive Watco...which is an oil/varnish mixture...just use plain old BLO for your oil. And do use de-waxed shellac since you're going to top coat with water borne finish.

Zinnser makes a sealer which is a dewaxed shellac. I get mine at Lowes.
