Spalted wood for utility bowl?

Can I us spalted wood for salad bowls and other utility bowls? I have just gotten a very large Oak, but its starting to spalt. I know if I rough them in they are going to keep going.

The only thing I would be concerned about is that Spalting kind of like mold and caused by bacteria.

Tony I was told by a turner that gives classes at Woodcraft that it is not a wise idea to use spalted wood for eating bowls.
