Is there a relationship between the infeed/outfeed table and length of stock you are machining?
If your piece exceeds the above, will an infeed/out table help?

The conventional wisdom on jointers is that you can effectively machine a board up to twice the length of your jointer bed.
As far as adding on infeed/outfeed tables to a jointer goes, they certainly could help in the handling of long boards but I think they would do little to help accurately joint them. In fact, they could do more harm than good in this respect.
