I have a Freud 8" stacked dado set that goes to 7/8" wide cut. My old saw had two spacers on the arbor shaft that you could remove depending on the width of the stack. On my new saw I cut a 1/2" dado the other night and didn't see many unused threads. I looked at the manual and they said to remove the outside washer and just use the nut against the outside blade. Is this right?

Mike that is correct. Sometimes, you cannot fit the outside "washer" on when using a dado stack wider than a certain amount, depending on the length of a particular saw's arbor. This is especially true with some contractors' style saws. It is safe to use just the nut in this case...as long as there are enough threads engaged to be able to snug it up to the blade securely. (Don't over-tighten the arbor nut, no matter what blade you are using. It's not necessary...the rotation of the saw will make it tighter anyway)
