Spotted this in a Bessey marketing image. Looks like he's slotting for biscuits, but why there? And what is that tool?

Biscuits to attach a top to some commercial cabinetry- a bank with temporary spacers?

The tool looks like an Elu biscuit joiner. My guess they're for aligning the countertop to the face of the drawer fronts.
