I'm looking for a source for some thin (about 3mm or less) flexible plastic. Polypropylene or something like it that's very thin and flexible and can be cut with scissors or paper cutter.
I'd really appreciate anything you can share with me.

Amazon or probably any crafts store. But I looked it up, Amazon carries various thicknesses and sizes.

Will plastic sheets for laminating work? They come in various thicknesses...

If you need bigger than they are...?

Mcmaster Carr. Good source for a lot of various items. Not always the cheapest, but they keep stock and have it most of the time.

One of my favorite places to buy materials is Online Metals. I've bought aluminum, steel, brass, and a number of plastics.

I find their pricing and shipping reasonable.
