If my stiles are 2", should my rails be 2, 2 1/2" or 3" wide?

Really your prefrence. The only stile and rail doors I have built were the same side. But then I had already sized all the material first. But then again look at a door.

It really is a matter of preference. I tend to make mine the same size unless the design calls for something specific.

Mine are all the same, unless the top rail is arched.

2-7/16" works great if you use CMT router bits. check out the instructions to see why at sommerfeldtools.com

They actually may be different top and bottom, depending on the normal viewing position... ;) This is all about proportion, both real and perceived. (visual) I tend to make the top rails narrower than the bottom rails, for example, as this looks best to me from "where I stand".
