Afterthought.... what is that hammer he is using?

They are Japanese chisels with the hollow grind in the back for ease of flattening. I'm not into Japanese chisels, but some of the Neanderthals are. They likely can give you all kinds of details on it.

Japanese Chisels indeed, hollow on the flat is called an Ura i believe which as andrew said is for easy of flattening. I wasnt that big into Japanese tools either until i got my hands on some good quality ones, they take and hold a superb edge. Damn good tools in my opinion not cheap though, then again which good tools come cheap?

Hammer is a japanese Genno, you strike chisels with a steel hammer instead of western ones where you use a Wooden or a Plastic mallet.

The ura isn't so much for easy of flattening, although that is a big advantage, it is mainly because the steel is so hard that a full flat back would take ages to polish and you would have a lot of resistance on the stone.
