I have a Veritas side rabbet plane on the way. Lacking a shoulder plane at the moment and wondering - has anyone tried using a side rabbet plane to trim tenon shoulders?

Tyler, no doubt it can be done, however it would be cumbersome and poorly balanced = poorer control. I would rather use a wide chisel (set the edge into the knifed line and push into the shoulder).

Only once.
The method Derek describes works much better.

I would not think it would work well. You are cutting end grain there. One more vote for the knife and chisel method.
