Butcher block counter top

I am considering butcher block counter tops in Maple or Cherry. I do not know anyone who personally has them in their
Kitchen, do any of you have them or know anyone, likes, dislikes? I know there is maintenance involved and wonder which is best finish, Oil or a food grade clear coat?

Ed, is this for the whole kitchen (including wet areas around the sink) or ....? Are you going to cut food on the worktops?
