The two basic types of click-together laminate flooring are "angle-to-angle" and "drop-and-lock" (https://www.youtube.com/watch?v=M4mWfJwxizQ ).

I can find videos on how to install drop-and-lock flooring under door jambs ( https://www.youtube.com/watch?v=hiq6QtQugvk , https://www.youtube.com/watch?v=ZVlL8AID5Lg&t=140s )

Does a similar technique apply to angle-to-angle? i.e. Do you shave off the upper lip of the tongue on the end of the plank? and join the ends of the planks with glue?

I would shave and glue, personally in that situation since it's pretty much not possible to get the angle you need to snap it together normally. The material the flooring is made from will affect what kind of glue you use. ;)

Start at the threshold. Click together and slide into place.

You mean start the whole installation at the threshold? Unfortunately, the rooms involved each have several doors.

Yes. Start at the doors. The ones where the flooring goes through the threshold at ninety degrees are easier.
