What do you recommend, and why?

Tungsten carbide without question. Nothing else has the service life and durability. Disposable tips have a longer life than brazed on tips. I have used them for about 40 years. Cheers

I use M2 and T1 I've been staying away from the abrasive excotics due to allergys.
I can sharpen both steels with my Tormek.

Andrew, can your Tormek do 16" knives? Can you tell a difference between the M2 & T1?

I wouldn't bother trying to sharpen 16 inch knives on the Tormek.Too hard to grind a straight edge.
Yes there is a difference between T1 and M2 just like the difference between Hickory and good hard Cherry.
M2 did very on a white pine table that had knots. But I had to joint the knives in the machine with it running to get there.
