Shadowbox quick finishing?

I am making some military shadowboxes and flag holders. Walnut is my main material used, although I am doing some cherry and maybe an exotic.

I am not very experienced with finishing. What would be a fairly quick and forgiving finish and finishing technique?

I tried masters tung varnish, and after 5 coats over 5 days, it is still shiny in spots and dull in others.

I would prefers something that looks good in 3 coats or less. I dont care if it is glossy or matte. Durability isnt too much of a factor, as its going on a shadowbox hung on the wall.

My first choice would be shellac, especially on walnut.

For something decorative like this, Shellac alone is just fine as long as you are either happy with the gloss sheen or are willing to rub it out for a softer sheen.

I use brushing lacquer for just about all my projects which are primarily cherry and walnut. For me it works well.
