I am trying to make a printed sign to mimic this engraved sign. Would any one know what this font is?

In my opinion it is not a font at all but handmade lettering. Look at the differences in the e's and r's.

I agree somewhat with Mike about it being handmade lettering which will vary anywhere from a little to a lot from whatever the sign maker was using for his guide. I used to use the catalogs from Format and Panatype many years ago before people had hundreds of fonts on a computer.

The closest match I could find is Papyrus Regular:
