I have some of the wonderfull so called 3/4" plywood, it measures 11/16" thick,
can I use a 3/4" dado or do I need to get a 11/16" bit?
Will the 1/16" gap screw it up?

Plywood should be 23/32", which is a 1/32" under 3/4".
3/4" dado will leave it slightly loose.

Router bits are available for undersized plywood.

Every manf of plywood is different and most vary slightly. Get a plywood router bit which is slightly undersized, should work.

Either get a cutter that is the right size, or use a 1/2" bit with two passes to get the exact width groove or dado you need. You do not want gaps as it will make your glue joint weak.

I do a variation of what Jim says, clamp 2 fences snug up against a piece of the ply with a folded-up dollar bill...remove peice of ply and make two passes with a 1/2" bit with top bearing. It's actually four passes 'caus I don't like to remove more than an 1/8" at a time.
