I found some great veneer in a dumpster that has already been glued to a thin substrate. One piece is 6'x'4' walnut burl others mahogany and seple. Can this be reused now it's on the substrate? The burl is fabulous looking.

I'd say yes, for sure. Someone saved you a lot of work and money. Assuming you want to use it in a thicker format to make a table top or cabinet, for example, it would be best to glue it up as a sandwich with your thin veneered on one side, the main substrate, and then another thin, veneered substrate on the opposite side. That would give you a balanced construction and it should remain nice and stable.

Thanks that sounds encouraging. I haven't worked with veneer so far but have wanted to often. the walnut burl is great looking but was bent/cracked in the middle so I had to cut it in half. Still you could make 2-3 good size table tops from it.
