Flooring Finishes

Why not use flooring finishes for things that will take a lot of abuse? Like, bar tops, table tops (man cave), etc....

There are a lot of good reasons to do so, as you noted. The major downside is that floor finishes have modifiers that aid in self-leveling of the wet film. As such they can be very difficult to apply well to vertical surfaces--such as the edges or near the edges of the aforementioned table tops, bar tops, etc.
